Responsibilities

Internship: R&D Technician (3 months) – Impact of Fiber Incorporation in Bakery Matrices

This internship is part of nutritional reformulation projects aimed at reducing sugar content in bakery products while maintaining their organoleptic qualities. The main objective will be to evaluate the impact of fibre incorporation on matrices such as pound cake or quatre-quarts.


Your main responsibilities:

  • Conduct a bibliographic study on the use of fibres in bakery products, focusing on pound cake or quatre-quarts matrices.
  • Develop a model recipe in the lab.
  • Perform fibre incorporation trials and characterize prototypes using analytical and sensory techniques (texture analysis, rheology, crumb structure, color, sensory panel).
  • Analyze and summarize the results

Vereisten

  • You are completing a bachelor’s degree in food science or an equivalent program, with a strong interest in R&D and bakery products.
  • You are meticulous, well-organized, and capable of managing your trials independently.
  • You have a good level of English (B1 level), both spoken and written.
